Health
A well-planned plant-based diet can meet nutrient needs at every stage of life. In observational studies, predominantly plant-based patterns go together with more favourable blood pressure and LDL cholesterol.
Said plainly: vitamin B12 has to be supplemented reliably. That is not a drawback but a condition — and an easy one to meet.
Animals
For many people this is the real reason: fewer animals in systems that are efficient at the animals' expense. That is an ethical decision, not a measurement — and it goes well with step-by-step rather than all-or-nothing.
Environment
On average, plant foods need substantially less land and cause fewer greenhouse-gas emissions than animal foods. How large the effect is depends on the product — the articles below name the studies.
